Crispy Sheet Pan Gnocchi and Veggies

A one-pan dinner of roasted gnocchi and vegetables that doesn't even require you to boil the dumplings.

Ingredients
∙ Serves 4

1 (12-ounce) bag Baby bell peppers, mixed
2 tbsp Basil, fresh leaves
4 cloves Garlic
1 pint Grape or cherry tomatoes
1 Red onion, small
1 tsp Rosemary, fresh leaves
Baking & spices
1 Black pepper, Freshly ground
1/4 tsp Kosher salt
Oils & vinegars
2 tbsp Olive oil
Dairy
1 Pecorino romano or parmesan cheese, Grated
Other
1 pound fresh, shelf-stable, or frozen potato gnocchi
